Organically grown in the shade of orange trees, creating a unique acidity and honey processed. Deep, sweet aroma with predominant honey notes surrounded by chocolate and floral hints. Tangerine flavour with green grapes, pear, and chocolate. Honey-like sweetness and black tea.
Medium, well rounded body; smooth and clean feel with a cacao sensation. The acidity is complex and well structured of citric, malic and tartaric acidity with a tanin finish.

The honey process takes fresh, de-pulped coffee cherries and allows them to dry without washing. Some of coffee cherry fruit remains, but far less compared with natural process. The remaining golden, sticky mucilage is like honey, hence the process name.
Honey process uses less water compared to washing. The fruit can be removed by hand during milling rather than being washed off.
